From the seedling stage until early maturity it can be harvested for fresh eating in salads and garnishing sandwiches; when it gets older--which it does quickly!--it can be braised in olive oil for a terrific cooked green that is great with pasta dishes. 500 seeds per pack. How to Grow Arugula Fast-growing green can be direct sown as soon as soil can be worked. If transplanting, transplant promptly; the fast-growing seedlings resent checked growth, which can cause them to bolt prematurely. Harvest when young for fresh use, when slightly older for braising. The cool-loving green doesn't particularly like mid-summer, but it will do well most of the season: keep on sowing!
