While turning sugar beet into sugar is no small feat (see this link for the full story), growing sugar beets themselves is no harder than growing regular beets. Another fun fact about the sugar beet is that in 2002 Utah designated this pale root as its state historic vegetable. For clost to 100 years, the production of sugar from sugar beets has contributed substantially to Utah's economy. Who knew?
