You will have so much fun sharing this little known herb with your friends! The flavor lies somewhere between cilantro and fresh curry leaves, and always causes a look of giddy wonder upon those trying it for the first time. Papalo is native to Mexico, but is rarely used in the United States. To use it, simply substitute it for cilantro, but use half the quantity. Just a few leaves pack enormous amounts of flavor. Papalo seeds have delayed and low germination by nature, so be sure to over-sow. Fret not, 1-2 plants are generally enough for a seasons worth of eating. Limited supply.

Start indoors 4-6 weeks before last frost. Papalo has a low germination rate, be sure to over sow. Germination can be slow, so be patient. Keep soil moist, but not wet, and make sure the air is not stagnant. Once seeds begin to germinate, do not over-water and keep air circulated to prevent damping off. Transplant when plants are big enough to handle, 2-3 inches high, at 6-10 inch spacing. Papalo grows in full sun to partial shade and prefers well drained soil. Harvest by cutting the stem at a branching point to encourage more growth.
