Too often thought of as a garnish, this curled leaf parsley is high in amino acids, aspartic, and glutamine. It's also cold-hardy and can last long into winter under glass. Seed Saving Tip: Build a simple cold frame over your parsley patch and watch it recover next spring. Parsley turns into a large shrub covered in white flowers, so leave enough space. Fits well into a cottage garden scheme.

Start indoors early and transplant or sow parsley as soon as the ground can be worked outdoors. Parsley can take up to 2 weeks to germinate, so be patient and keep area watered. Thin parsley to 6-8" apart for bushier plants. Harvest parsley continually by cutting off the outer stems, leaving the middle leaves to grow.
